I am looking to run only 2 layers of head gasket on my GP1200R. I am starting with a brand new gasket. Should I put anything (coating) between the 2 layers, or just bolt them up?

just apply a thin layer of grease and torque it down.

Not to get off the topic NeVerMind started, but what does the grease do? Is it for sealing?
I did the 2 gasket layers with copper spray with good results - no water leaks and good compression

Is this just a cheap way to add some more compression? What is the benefit of the 2 layer gasket instead of the 3? Any idea what the gain is if its compression?

Yes it helps it seal.
