Which do you believe is the most incredible, awesomest, bitchinest ride?....or...in other words....I'm wondering..what are the pros/cons of these and which would you find to be the better value for a family of 3?
1. 1997 GTX / $1800
2. 2000 GTI / $2000
Lets go Seadoo owners...whatya know?

There is not much difference between the two. They have the same hull. The 97 has the 787 engine at 110 hp, the 2000 has the 717 engine at 85 hp. Obviously, the 97 has more get up and go, but I would consider both to be underpowered. The 97 will top out at about 52 MPH, the 2000 about 48 or so.
So, to be truthful, my answer to your question "what would be the most incredible, awesomest, bitchinest ride", would be "neither". I have a '99 GTX Ltd with the 951, which is also the same hull, but at 130 HP would spank either of those two you are considering, but even that I would not call "most incredible, awesomest, bitchinest ride". (I also have a 2001 XPL, so I have something to compare to.....and that I would call "most incredible, awesomest, bitchinest ride"..... But that is a one-person ski, so it certainly wouldn't work for your family of three.)
They are both what I would call family cruisers; if that is what you really want, then they both will be fine. My neighbor at the lake bought a 2000 GTI new, and it has run perfectly for almost 10 years. The 717 was one of the most reliable engines SD ever put into a ski. Your family will have fun with either one, and that is what is important.
Just don't hop on an XPL (or RXP) and wish you had that "get up and go".

I agree...neither. Get a 99-2002 GTX with a 951 engine. This is when it gets "bitchin"

Depends which one was taking care of ??
If they are both the same I'd lean towards the GTX
