My Engine Temperature all the while is 90F but when I tow a ski it reach up to 105F but why Engine didn't cutoff?Did the sensor faulty?

My friend told me he ski was cutoff when reach 95F and all the while he ski is maintain on 84F.

These engines run around 180F stock. If you are looking at the gauge on the stock gauge labled E-temp, it is not engine temp. It is enviroment (air) temp.
