drain the gas, or burn it off, or add fuel stabil
go to the local Oreilley and buy some fogging oil. Fog the engine through the carbs until it dies.
make sure you wash off the ski engine compartment with Dish soap, rinse, and spray some thick rust protector spray.
I would store mine with the tongue all the way up so all the water drains out, and I'l leave it with the water plugs off.
and please dont forget to disconnect the battery and bring it inside your garage.

I would also change the pump oil, so if there is any water inside it wont seize the bearings over the winter, pump oil change is on the How To Section

you forgot to add the RV antifreeze for the northern boys....+1 on ultramax's post
step 1. there is a small line that comes off the bottom of the cases that exits through the exhaust. (its in the bottom of the hull next to the battery) fold that line and zip tie it.
step 2. take off the water OUT line from the head and get a funnel with a hose to fit onto the water OUT line on the head.
step 3. fill till you see RV antifreeze come out the pump.
