94 slt 750 fuel problem. Help!

Took my ski out for the first time this year and I have problems. First thing I noticed is it has no acceleration on take off. Takes it forever to plane out. After that it would only go 35mph. I just rebuilt the carbs, so I adjusted the high screw and gained 10 mph. So then it would really feel like it had some pop to it after it planed out but was still taking forever to get on plane. I have a tripple outlet fuel pump and run premix. My compression checks weren't as high as I'd hoped, but certainly enough to get me through the season. The last thing I noticed is when I was running WOT it would run great for a while and then die at random times. I'm not talking about bogging and then die, I'm saying running great at full speed and then die. Help me out guys...

    Thanks!

What are you carbs set at right now? How many turns OUT from a lightly seated position with the limiter caps removed?

    What is your compression?

Have you trimmed the plug wires back yet?

What's your piston wash look like?

Mag 1 1/4 Cen. 3/4 PTO 1. I turned them all out 1/4 from factory to gain the 10mph. My compression was 115 118 and 120. Plug wires have been trimmed and piston wash looked a little lean until I made the last adjustment, now it looks good.

If I'm already pretty far past factory settings, what could be the problem?

Fuel return line flow restrictor info can be found through my signature links, under Fuji Engine section.

I have 780 carbs on this set up to 750 specs. I took the restrictor out since the 780 carbs have one built in.
