That is a variation of the "package" that Kerry was selling a few years back. His was in the shoe only, and located farther back. Some, including Insanediego Joe was using this, with holes similar to yours.
I don't have the recommended hole-size numbers in front of me, but with the speeds and loading capabilities of these skis, you will need something other than holes in the shoe to help you out when the pump pressure increases due to speed/angle. That grate on the right looks like a modified 800 grate. Possibly SST?

put it this way, that pump shoe photo (I don't know where you got it from) but it is my pump shoe, I have those two holes, plus a 3/4" pressure reliefe valve and a 1/2" pressure reliefe vavle and my Motec is telling me I'm still seeing 55-60psi pump tunnel pressure.

7/32" hole size and it wont be enough.
