Do all the cyls feel warm to the touch? (no plugs fouling?)

Pull the throttle WOT and let it die. Then remove the plugs and see if they are wet or dry. (take wrench with you)

Does pulling th choke help? (lean)

    What's your fuel pressure?

Most tests on the trailer are worthless. There's no real load on the engine.

650 and 750 don't have limp mode, so that's definately not it.

Install a low reading pressure gauge between a carb and the fuel pump. You should have 1-2 psi at idle and 4-6 psi at WOT

What's your fuel pressure and how do the plugs look when it stalls out on the water? (wet or dry)

ok i figured out the problem the my trip outlet pump rebuild kit came in i took it apart and it had some knock off parts inside and the diaphram had a pin hole in it. i rebuilt it and the ski came back to life. i still did the test u said to do and the pulgs were kinda dry and i used a brand new set of ngks. they had a good brown tint also.
