Nice Ride... Here would be some suggestions after owning and racing 6 of these Pro's. Fog the motor after the boat after every ride, Use 93+ octange gas, Don't use any cheap oil, Check and clean the valves after 10hr of use and most of all... Clean and wash it... (Love it like one of your kids) KIDDING. Purchase a compression gauge and check the compression. A stock 785 should have about 130-135 lbs per cylinder. You mentioned you have a Hot Seat Head on it. You need to check what domes you have. (One Dot, Two Dot or Three Dot.) Randy at Watcon will know what the compression should be.

I had a stock 785 with 120hrs on it and it ran perfect. The compression was down a bit 125lbs but it ran great for a REC boat... Call me if you have any questions... 585-261-3360.. Jeff

Sounds like your doing everything right. The reason I would say to fog it the motor with foging spray is that 785 cranks are NOT cheap... Mositure will build in the boat and water will sit on the crank and will rust internal engine parts...
