Water coming from head gasket - GP800?

Just did a cylinder exchange through SBT. Got off the phone with their tech support, guy was pretty curt and seemed annoyed to be bothered with a question.

Basically, finished up all the work yesterday. Went to put it in for the break in. Compression ran great, started the process and came back for the cool down there is 3 inches of water in the hull. Drained it, checked for leaks, went for second step in break in procedure, came back and another 3-4 inches of water. Other than the water, it's running great.

Drained it, got it up to the dock and couldn't find a leak. Went to hit the starter button and BAM, water spraying out from between the cylinder head and gasket. Cylinders are dry, no water in them.

Guy at SBT suggested maybe an upside down head gasket (though there were no markings on it).

    Anyone have any other thoughts?

upside down head gasket, wtf! Are you sure the bolts where
    A) tightened in the right order?
    B) tightened to spec?

    Did you re-use the headgasket?

yeah. I was a bit confused when he said that.

    yes to sequence and torque.

no, brand spanking new head gasket and sprayed with copper spray-a-gasket stuff.
