possible lean condition, whats the best way to read plugs need some help

My 01 gp800r,just got it running, had to replace carbs since hi speed needles were seized into the bodies,so I pulled the carbs off my 99 gp800 and rebuilt them with mikuni kits and tossed them on.my 01 carbs had 150 main jets factory and my 99 has 157.5 factory, which shouldnt matter much cause they are exactly the same engine.I took it out today for a few min and noticed my peak rpms were at 6700 rpm,so I ran it for 20 sec at wot and pulled the plugs and they were a nice dry white, they are new plugs though.I vac checked the motor and it held for an hour so I know there is no air leak in the motor I have Rica flame arrestors and my lows are at 1 1/2 out and the highs are at 1 1/2 out should I try running the highs at 2 turns out to see if I can get some color on the plugs.I'm on premix 40:1 amsoil dominator, compression is 120 on both,it never lean seized or over heated,I'm scratching my head where to look next.the tank didn't hiss either when I pulled the cap which was odd and I also noticed when running on the hose if u rev it the rpms will fall to 3500 for a few sec then it will drop back down to idle speed
