Have you check the hose off the pump, yet?

Have you had the charger out recently? maybe the temp sensor wire is pressing against the exhaust.. Ive had this happen just a thought.

Are you starting it on the hose and letting it run for 10 min?
Or are you in the water??

If you start it on the hose don't let it run for more than 1 min.
You can seriously screw your doo for running it on hose for too long..
Your carbon seal isn't being cooled while on the hose...

On the different displays for the viewing screen put the engine temp there and watch it for your self.
Hit the mode button till it says display the hit the up arrow till it says engine temp and hit set.
My ski runs around 197-198 degrees once warmed up.
If your display doesnt do the engine temp then your ski needs the latest buds update.
