I have 2 stand ups, I tried converting my single trailer to a double, but was about 4 inch shy, Is it possible to turn the ski's side ways on the trailer ??

Just make sure they are tied down some how.
You can configure them any way you want as long as the weight distribution is equal.

I would just widen the trailer... (Or makes the skis overhang)

Skis sitting on their sides on the bunks? Probably not good for the watercraft. Engine mounts, fuel tank mounting, etc would all be stressed in a non-standard direction.
Skis sitting across the trailer, from wheel to wheel? Make sure they do not overhang more than the legal limit for trailer width. In my region the max trailer width is 102 inches, and many standups are longer than that.

Most people forget to account for the extra weight/load. So make sure you are still within safe operating range of the load capacity of the axle and leaf springs once you convert it.
