Condition mostly depends on your inspection.
Beyond the engine, the jet pump and drive line is the other major area that can suffer from salt water corrosion. The SS wear ring liner can deform, the other mating pieces can just get corroded or stuck together. Driveshaft may have corrosion or wear at the through-hull or in the splines.
Check the sacrificial anode puck on the jet pump. But mostly just inspect the metal everywhere.
Assume that the jet pump will need rebuilding and possibly a couple of replacement parts.
If you are going to be rebuilding the engine yourself then you will have more work to thoroughly clean up any internal salt/corrosion.
Inspect the electrical system. Look inside the electrical box. Make sure the connectors and contacts are still clean and shiny.
Speaking of electrical, if the original stator and CDI are still present, you should add the cost of an Ignition Update Kit, which is much more reliable than the original system.
I wish you well with your project, if you decide to go ahead.

I BOUGHT IT!
turns out a fat guy and 2 girls where trying to get on it and the weight of that broke the seat latch while the back of the ski was underwater and the ski sank, the engine then sat for 2 years and the guy opened it up and found water still in it, its going to be a treat taking that apart! and i really hope the pump and what not is in good condition, he says the ski is in EXCELLENT condition, we shall see, i got it for 350 bucks and shipped for 150. i think thats a decent deal for a complete ski, less engine

You shipped a whole, 2 seater, jet ski from Florida to Wisconsin for $150? Wow... I would have guessed 3x that amount.
Hope you find its condition excellent as advertised.
