I have the same kinda questions, i'm also painting my ski. it seems like everyone does something differently. my ski is sanded down and preped for paint i just can figure out what brand to use? or how many coats? basically all i know at this point is that the order is primer, paint, clearcoat.

PPG paints are really good along with House or Kolors if you want something really different. Remember when painting the final product is only as good as your prep work is.

Imron is great, Awlgrip by Akzo Nobel is also very good paint, and the factory Sherwin Williams Sunfire paint is extremely strong. I don't believe any of them recommend being below the waterline though, so you might want to do gel coat on the bottom.
