100 octane race gas
Would there be any problem running 100 octane gas in a stock 2007 gtx 215 and an 2009 gtx 255?

Yes, you can run it, but the fuel sending unit may not like the lead over time.
An 8.4:1 engine doesn't need 100octane, and you WILL see a performance loss of a few hundred rpm.
I run 93oct with 9.5:1's, 17-18psi at 8720rpm-ish.
My Vtech map was supposed to have been written with timing for 100octane, but it wasn't. If I use 100octane, I lose @300rpm at my elevation.

50/50 with pump is more than enough for a low mod ski

Race fuels will clean your engine and smell nice. You'd do fine with some Klotz or Torco and unless you're pushing your timing hard then there's no need on a low boost ski
