    Stainless steel grade differences.

Does anyone know what the difference is between 304 and 409 stainless steel and what would be best for use in watercraft?

I have only of 409 being used in watches, I deal with 304 and 316 in WWTP design everyday, 304 will handle anything you can throw at it, unless you descide to ride in water that has a PH of <4 then you might need 316. The price of 316 is considerable more than 304.
