Angry XLT1200 won't go past 5 mph before it dies

My 1999 XLT1200 will idle fine but when I throttle it, it revs to 2-3k and dies.

Things I have done to try and fix this problem

    Rebuilt Carbs
    Removed Fuel Flapper
    Changed Fuel Filter
    Rebuilt Fuel Selector Switch
    Checked Powervalve Motor
    Removed and Cleaned all Powervalves
    Changed Plugs

Is there something that I am missing? Please help because I'm about to set this thing on fire....

After idling a bit try to accellerate, when it bogs or dies, pull the seat quickly and feel around each cyl to determine if one is a good bit cooler than the rest. They all should be pretty warm. That will help you figure out if its just one cyl. Pull one plug lead at a time, put a plug in it (spread the gap on the plug to see it better) and watch the spark while running and revving it to see if you have good spark at each plug. Do a compression test on all cyl, if all that checks ok then you probably still have a carb issue or a major air leak. When you pull the carbs this time to a pressure test of the engine to see if you have an air leak. Crank seal, cyl gasket, reed or carb base gasket, etc.

Compression is around 110 for each cylinder. I did notice that the plug in the rear cylinder looked new compared to the front 2 but all are getting good spark. Would a broken reed valve cause this? I checked the carbs and they seem to be okay, pop off is at around 80psi on each one. Is an air leak something that would cause it not to go past 5mph? When I have it out of the water, it revs to 7k with no problems.

You pulled the pump side of the pump apart and checked the internal filter? Did you pull the needle/seat and check for debris under it? Really sounds like fuel, have you checked to see if the back cyl is the same temp when loaded(trying to get on plane)? The thing is these triples will sound great on the trailer even with 1 dead cyl, but will not pull up to speed.

Yep, I completely disassembled each carb and they were clean. I haven't checked the temp while trying to plane though.
