The duck bills make leaving the ski in the water unattended for any length of time very risky. If any foreigh material (leaf, twig, screw etc) were to get into the duck flapper and prevent it from fully closing your ski could get flooded. I have seen it happen. On the race course the duck bills could be worthwhile and less of a risk.

You could duplicate that Riva kit by buying the parts elsewhere for a fraction of the price.

    Indicator Panel

I don't think you need a bildge pump on the Ultra. Nice backup
but you're usually on it and should be aware if it is taking on
water. The bailers work so good I've quit checking the back
drain plugs after each run, when I opened them I never got a drop
    of water.

If you did put one in I'd put an indicator panel on. That way
you can tell if the pump is running or not. You can even get an
alarm version. This link shows one and also a Rule PWC kit.

It's normal for water to get in boats, the bigger the more water. Therefore
you monitor how many times your bildge pumps are cycling and after
you know your own boat, you know if you have a problem if they run more
    often.
