Check the hose on the J pipe and around the thermostat housing....was there any coolant "green" in the stuff that came out....if not can can rule out the thermo area

If a gallon came out then you might have a leak somewhere. I ride in some rough Stuff sometimes and the most i've seen come out is a couple table spoons.

you'll probly have a leak on the exhaust coolant, run it on the hose and check for leaks

Check your bottom j-pipe fitting and the water inlet for the exhaust manifold.

You could have something else leaking water into the hull then that water gets heated from the engine block that is sitting in it?

could also be the exhaust hose to thru hull fitting leaking too. I had a leak there after my powerpipe install. couldn't see it leaking, but i could wrap my hand under there and it was wet and dripping.

checking it on the hose is definately your best start here.
