Welcome Chris to the GH forums.
Step your sponsons, and try it again. If that doesn't do enough for you, space your trim tabs down 3mm.

    Is this a GP800 of GP800r??

IF it is a GP800, shim the rear of the oem ride plate down until the ride is better (a washer or two) and/or purchase some 10mm tabs ('99 didn't have tabs, not sure about the 2000). You can also purchase an aftermarket rideplate (also shim till comfortable, don't get the Riva groovy rideplate, get the regular Riva rideplate). Using the plate and tabs I was able to lock down my wifes gp800. It was almost unrideable when we purchased it.

Try and purchase any aftermarket parts at Greenhulk before going elsewhere.

    Welcome to the forum emack.

I don't believe Jim mods GP rideplates of any kind. Try shimming the OEM plate in the rear a couple washers. Also I think Riva still makes a trim tab kit for these boats too.

You might want to try the Yamaha Old School section, those guys should have plenty of tips for ya.

Yes, but I doubt that will be enough. At least it wasn't on mine.

Welcome to the forum Chris, Give me a call and we can go over the ride plate and what impeller you will need depending if your ski is stock or has any mods. 727-365-5132 Thank you, Jim
