There is a butt-ton of air behind a boat, in the water. Turning purpendicular to the thrust, with the lack of water density, that ski will sink like a rock, until you hit clean water again.
The real surprise, is how he held on, and kept it shiny side up.

trim the nozzle down and lean forward on the ski, apply throttle and youll go under.
