Manual says 100 hours i believe. It wouldnt hurt since its "winter", that way your summer is not interupted. I'v got over 130 hours on my 15F, and have yet to do it.

Damn! you put on 93 hours last year? Didn't I ride it with like 10? Totally jealous. I think I only got in 20 last year. I so miss Florida when I could ride everyday. Sucks being responsible and having to work......

i wonder pondering this, I shouldnt hit 100hrs until next year, but I will probably leave this maintenance until there are signs it needs to be done (i.e. stalling after landing from a wake, etc.)

does anyone know if the valve cover gasket needs to be replaced after this maintenance?

You shouldn't need to replace valve cover gasket. Its thick rubber, and you should be able to remove the valve cover many many times before ever having to replace. Do check the spark plug valve 0-ring gaskets inside the cover. There are 4. One of mine fell off while the valve cover was off and I didn't notice and it was leaking badly thru the spark plug hole out the weep hole in the head and down into the ski. Lost over a quart on that deal.
