Reuse of metal exhaust gaskets
Is there any problem with reusing metal exhaust like the ones on both sides of the Yamaha cat converter? These gaskets are fairly expensive and I'm thinking that I can spray them with ultra copper and reuse them.

Just as long as the are not kinked in any way, you can reuse them. they are pretty durable. Make sure the surfaces are clean prior to re-install.

Is this acceptable on all the metal exhaust gaskets? What about the metal head and base gaskets?

Same applies. The head gasket is more critical check that the coating is still intact (not worn through) if not replace. I use a light coat of grease when I install gaskets and usually get several uses out of them. I pull my head often to check cylinders so the ability to reuse a gasket is important to me.

good deal, what about copper coat spray, is that better then grease?

Copper coat is an adhesive and is a one time gig cant reuse gasket after using it.
