Coolant Temp Or Oil Temp??
pUT SOME GUAGE PODS ON MY X AND HAVE THE OPTION OF MONITORING OIL TEMP. OR COOLANT TEMP.
WHICH IS MORE IMPORTANT??
WHERE DO I PUT THE SENDER ON THE ENGINE FOR EACH??

Me personally would run the coolant temp over the oil temp...I would also run a oil pressure guage but this is just my preferance...

if u are running open loop and or turbo.... it's nice to see your oil temp make sure you aren't getting it too hot and thin to spin a bearing and make sure you are adequately cooling the oil cooler.... if so, take the oil temp off one of the metric plugs in the PTO cover just beneath the oil filter. drill and tap out the stainless metric plug to a 1/8NPT and that's about the best place to take oil temp
otherwise if no turbo and no open loop.... for me it would be a toss up between either oil pressure or coolant temp. there's already a built in alarm for an engine overheat so ur ski will beep at you... but if you have a slight fall in oil pressure the ski's monitoring system wont pick up on small subtle changes in oil pressure

on the PTO cover there is a passage that is cross drilled and goes to the far left of the pto cover (when looking at the ski from the rear)... there's a metric plug in that passage... same deal, you can drill out center of the plug and tap it for a temp sensor... i will get a picture of this passage if u like?
or get an extension made to for the 1" ? or 1.5" hose that comes off the back of the head and goes down into the thermostat... extend that out a little to reveal a little bit of that large nipple off the head and drill and tap into that
the tiny brass nipple that screws into the head and the small hose goes into the coolant expansiom tank.. drill that hole out large and tap it and put a brass T on there.... one part the sensor goes into, the other the line that coes into the coolant tank follows its usual course.
your best bet... least permanant, least risk, is the cross drilled passage in the pto cover... it's going to give you temps somewhat close to what the thermostat is seeing as the passage is right after the water pump wheel but before it goes into the cases or the head...
for open loop i like having readings off the exit of the cylinder head
