stock handle bars??? Hummmmm. I havn't seen that done yet. The only thing that i can think of would be to get some of the industrial strength velcrow (the wire type, not the fuzzy stuff) and just stick it on the OEM rubber cover that wraps around the whole handlebar unit.

Might do a search. Some have used the bicycle mount but there had been discussion that the handlebar was a bad place to mount as per falsing and signal disruption. Others didn't have a problem. I know some that mounted an antenna to their gps and kept the gps internal of the ski.
Initially I used my dashmount with swivel base, purchased from Garmin for my E-trex. Secured with velcro and lanyard.
Subsequently used velcro and lanyard knot and attached it temporarily to my PFD. It's accessable and have yet to hard mount it again.

I was thinking a velcro strap somehow secured to the back of the unit. Then just strap it down the fly.

This is the swivel mount I had used and mounted on the round in front of tach. Has a Etrex replacement battery cover that locks (bayonette clip) into the mount.

I have the same GPS I got the marine mount (from garmin) for $31 and am mounting it in from of the stock speedo (offset to the left so I can still see my fuel level) I had to remove the middle section of the mount so it was not so tall but its nice and it easily unsnaps from the mount.
