Absolutely not lifetime greased. Absolutely is in the periodic maintenance schedule.

"Intermediate Housing - Lubricate" (3-13 in my 2012 manual) :

    Initial 10 hour service
Every 12 months or 100 hours

MR-1/1.8L 2005 "hull-swap", thru-hull exhaust with custom baffle-chamber, ribbon-delete, R&D Pro Comp filter, APE MCCT swap, Garmin 44dv w/ thru ride plate transducer, Candoo-speedo, YDS, ATV mid-height bars OID grips billet trigger, thermostat pisser mod, 1100GPH bilge pump, air-cooled mosfet reg/rec, switched dual LiFePO4 batteries, Pump seal kit, Solas, anti-cavi cone, siphon-delete, water-flag valve, stereo system, VHF radio, DYI fishing rack

Well, about 12 months or 100 hours, this is not accurate, it all depends on the state. Better more often

Wwwwwow! I did NOT know about the “Initial 10 hour service” mark ... Ouch!

Well, I got it last (2nd) season and I intend to repeat when I winterize this Fall ....

Still amazes me how many people I meet on PWCs in my area that assume its greased for life and wonder why it fails.

I have always known about the Intermediate Housing from my first waverunner, but I agree a lot of folks are not aware. However, something must have changed because on my 2021 it "DOES NOT" have you servicing it at the 10Hr mark, instead it only shows 100hr's or 12 Months for the first service.

Yamaha SVHO recommended maintenance and schedule - what is not being done?

The service schedule for the 2017 GP1800 SVHO does not include the ten hour initial grease service.

I don't have my crystal ball nearby, but there was a poor track record once upon a long time ago in which many units rolled off production without enough lube. Talking bone-dry.
My guess, that the assembly workers did not account for the remote Zerk hose length, so one could say the 10hr might have crept-in as a pseudo back-stop to catch these dry ones in time - and it has.
Fast forward, now the hose extension is long deleted, units are being sufficiently lubed off the line, perhaps better QA processes, all culminates into not needing the 10hr sanity-check any longer.

Does the 2021 GP1800 still use a mid carrier bearing?

Is the zerk usable or do you need to fab an extension?

According to the GP18000 2021 parts fiche on the Yamaha Partshouse site ... yes, it looks exactly the same a previous years.

Yes, the OEM Zerk fitting on the housing works fine - it's just a pain to access. So, in that regard, I don't think anyone stated this remote extension modification was a need. Rather it is a convenience.

Only if you use too much grease. A few pumps is all it takes

Agreed. This is like an old wive's tale. Not going to pop a seal - lol.

All you need to do is have this unit disassembled in-hand to see popping a seal is not possible - I'm guessing many have not.

FWIW, The seals are tapered, one-way, to permit flow outward, yet not inward There's a spring on the seals lip and ridges face outward, 2 for the aft and 1 fwd. Any over-pumps results in grease just slipping mostly fwd, as 1 seal is weaker than the 2 aft.

That said, let's say you have old dry-rot or burnt seals (aka no grease), yeah, I guess you could rupture it when pumping in grease..... But healthy seals ... over-pump all you like, your just going to get a messy bilge at worst, and a well grease IB at best.
