I ride offshore and I'll likely just be adding a tune and handling components to my stock ski (the conditions don't really lend themselves to speeds over 80 mph). I definitely want to swap out the ride plate (haven't picked one yet), however I'm struggling on the intake grate, as there's a healthy amount of seaweed and other debris in my area. I'd like to improve hookup, but worried about sucking in a bunch of junk. Thoughts?

I thought going with a top loader grate increases the chance of sucking up more debris. There is a larger opening that can now allow larger objects in? On Riva's website they state that the probability of pulling something in is greater?2019 GP1800R

It is under the review/questions for the grate. I just don't see how a wider opening would not have greater chances of pulling something in? Things that could not fit in before now can instead of being deflected away?

Well, they gave you a stupid answer. ANYONE with any experience using any of the scoop type grates will tell you they do NOT have any issues with sucking in any more debris then normal. The scoop grates simply channel the water that's already coming into the pump anyway towards the top of the pump increasing pump efficiency.
